Hakuna Frittata

Hakuna Matata is a Swahili phrase that means “no trouble”. Many of you may remember this phrase from the Disney film, The Lion King.

Here’s a “no trouble” Hakuna Frittata

Ingredients

4 eggs

1 cup milk

2 cups vegetable (any kind you like- this contains sauteed spinach, broccoli, scallion and sliced cherry tomatoes)

1 tsp olive oil

1 cup shredded cheese (any kind- I used 4 cheese blend)

1/4 cup real bacon bits

salt and pepper

Directions

Preheat oven to 350 degrees

Whisk eggs and milk together, add shredded cheese. Saute vegetables in olive oil about 7 minutes. Coat pie pan with oil spray (for sticking) and add vegetables
on bottom of pan. Add egg/milk/cheese mixture. Sprinkle bacon bits on top.

Bake 45 minutes.

Cut into 4 servings and enjoy!

**may use frozen vegetable as well- thaw in hot water in bowl before adding to pan***
