Red Snapper Veracruz

This is my absolute favorite fish recipe!  Native to Veracruz, Mexico, this dish is healthy and full of flavor.

The recipe calls for red snapper but you can use any light, white fish (i.e. tilapia, cod).  It’s fairly easy to make and big hit with those seafood lovers and tentative explorers alike.  Plus it has tomatoes which many toddlers like so it’s a great way to introduce fish in a more familiar way.
