Red Cabbage and White Bean Soup

I was looking for something to do with the red cabbage and carrots we got from our farm share and came upon this recipe.  Although the recipe calls for green, red cabbage has six times the antioxidant power due to the phytonutrient anthocyanin which gives it that deep purple color.  This soup is a great – a good balance between savory and sweet and perfect for a cold fall or winter day.  Try adding a chopped apple for additional sweet, seasonal flavor!
