Fiddlehead Ferns, A Taste of Spring!

I know Spring has arrived is when I see fiddlehead ferns in the produce section.  Although these friendly little greens are pricey, they payback big in taste and nutrition.  Fiddleheads are low in calories, cholesterol and sodium and high in vitamin A, C, zinc, potassium, phosphorus, iron and magnesium.  Sautee them in some oil and garlic and you not only add a burst of flavor, but enhance the absorption of vitamin A.  A little lemon brings out the flavor even more.  Keep in mind, you may want to add a little vegetable broth if you prefer them on the softer side.
