Soup – A Simple Solution To Winter Meals
There are a couple things that are great this time of year. One is coming home to a warm, comforting bowl of soup. Another is knowing
you have one or two simple recipes on hand. I often think of soups as “hot salads” – a great opportunity to blend together
some of your favorite vegetables as either a side or as the main part of the meal. AND, they’re easy to make!
Recently, I discovered I had way too much kale in the fridge and needed to find a recipe to help use it up before it passed. I was
thrilled to find this easy, simple and DELICIOUS Curried Chickpea and Kale Soup Recipe.
The recipe required only a few main ingredients: kale, chickpeas, coconut milk, and vegetable broth plus a few items commonly stock in the cupboard:
garlic, curry powder, cumin, honey, and salt/pepper. The chickpeas are a great sources of fiber and vegetarian protein while the kale is rich in iron,
fiber, calcium and antioxidants. From start to finish this recipe took no more than 20 minutes to prepare and serve. All the ingredients can
be either thrown into the blender or you can use a hand immersion blender to puree the ingredients.
