Lazy Day Spicy Chicken Bake
This recipe saved me yesterday. Seeing as I had no interest in going to the store and a desire for something to eat other than leftovers or cookies, I was determined to find something to make from what we had it our kitchen. Luckily we had some chicken in the fridge. I leafed through my most basic cookbook and found this recipe. We didn’t have canned tomatoes or green pepper so I used salsa instead. The result was extra spicy which is fine with me. Topped with Greek yogurt, it was the perfect one dish meal to warm the belly on a cold, snowy winter day.
Recipe for Spicy Chicken Bake (adapted from Better Homes & Gardens)
INGREDIENTS:
2-3lbs chicken skinless chicken pieces (with bone)
1/2 medium onion, diced
2 cloves garlic
1 TBSP oil
1-16oz jar mild, chunky salsa
2/3 cup long grain brown rice uncooked
1 can pinto or black beans, fluid included
1 cup frozen corn
1/2 tsp chili powder
1/8-1/4 tsp crushed red pepper
DIRECTIONS:
Heat oven to 375º
Saute onion and garlic in oil over medium-high heat
Add salsa, rice, beans, chili powder and red pepper
Stir well adding a little salt as needed
Transfer the mixture into a rectangular (13×8) casserole dish and arrange chicken pieces on top. Bake for 50-60 minutes or until chicken is cooked through and rice is tender.
I recommend serving with shredded cheese and Greek yogurt or sour cream!
